Deconstructed Cannoli


Really fresh, local strawberries may actually be the greatest thing in the world. They are so perfectly sweet and the texture and firmness of the fruit is just right. But strawberries don’t last for long–both in terms of freshness and because I can’t stop eating them–so D and I made sure to get started on them right away.

The Deconstructed Cannoli is a dessert of my own creation, born from my love of ricotta cheese. It’s a super simple, light and fresh dessert that you can easily change depending on your personal tastes and what you have available in the house.

Start with a good scoop of ricotta cheese, add fresh strawberries, chocolate chips or chocolate shavings and top with a bit of honey. Try to get a little bit of everything into each bite. It’s sweet perfection!
